  2. Comenzamos cortando todos los vegetales en trozos pequeños, la cebolla, el ajo, la zanahoria, el apio, y los ajíes (ojo con el ají picante, yo usé solo un trocito de 2 cm). Los tomates los escaldamos 1 minuto en agua hirviendo, los pelamos y troceamos en trozos pequeños.
  3. En una sartén amplia u olla calentamos 2 cucharadas de aceite de oliva extra virgen y sofreímos durante 5 minutos a fuego medio la cebolla, el ajo y el apio. Incorporamos los ajíes y la zanahoria y sofreímos 5 minutos más, revolviendo de vez en cuando.
  4. Añadimos el pimentón y el tomate. Seguimos cocinando hasta que se evapore el agua que suelta el tomate, agregamos el vino blanco y continuamos el hervor hasta evaporar el alcohol.
  5. Ahora es el turno de los lentejones, previamente lavados y escurridos e inmediatamente los cubrimos con el caldo ya caliente. No agregar todo el caldo de una vez, mejor solo cubrir la superficie con e ir agregando más a medida que los lentejones se van cocinando.
  6. Cuando los lentejones están "al dente" incorporar los mejillones y los langostinos cortados por la mitad. Tapar y cocinar 5 minutos revolviendo suavemente para integrar sabores.
  7. Dejar reposar entre 5 y 10 minutos, espolvorear con perejil picado bien fino y servir. Acompañar con pan calentito.
